Almond Cookie Recipe
This almond cookie recipe is great for tea parties, wedding
receptions or just for fun. I especially enjoy these
cookies
when I have the classroom moms over for coffee during the first
weeks of school or when my book club meets on those rare early
mornings.
• 2 1/2 cups all purpose flour
• 3/4 cup powdered sugar
• 1 cup unsalted sweet cream butter
• 2 teaspoons vanilla extract
• 1 cup finely ground almonds
Almond Cookie Directions
This is a two step process. Make sure you allow at least 2
hours for chilling.
Slightly soften butter. Place powdered sugar in a large
mixing bowl. Cream together butter and sugar.
Mix in vanilla and almonds. Add flour slowly to mixture.
You may have to knead the dough by hand to incorporate the flour
completely if you only have a hand mixer for the almond cookies
recipe. A large stand mixer should be able to mix the flour if
you make use of the dough hook that most mixers come with.
Chill dough for at least 2 hours.
When ready to bake your almond cookies, preheat the oven to 350
degrees. Spray a cookie sheet lightly with cooking oil.
Roll dough out to 1/4 inch thick, and cut into circles, moons,
squares or whatever shape of almond cookie you prefer. Place
cookies on oiled baking sheet.
Bake almond cookies for approximately 15 minutes or until golden
brown. Remove from oven, dust with powdered sugar and transfer
to wax paper to cool completely.
