Chocolate Peanut Butter Chip Cookie Recipe
One of my fondest childhood memories of
travelling with my family by car was our pit stops at small
convenience stores along the highway. I most always would get
a Reeses peanut butter cup and a Coke as a treat. This
chocolate peanut butter chip cookie recipe brings together the
memories of peanut butter cups and warm cookies baking in my mom's
oven.
As an added treat, use these
cookies as an ice
cream topper for vanilla or chocolate ice cream. Very yummy!
Chocolate Peanut Butter Chip Cookie Recipe Ingredients
• 2 and 1/2 sticks butter
• 2 cups sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• 2 cups all purpose flour
• 3/4 cup powdered cocoa
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups peanut butter chips
Directions for Chocolate Peanut Butter Chip Cookies
Warm oven to 350 degrees.
In a large bowl, combine flour, cocoa powder,
baking soda and salt. Set aside.
In a second large mixing bowl, cream together the
butter and sugar until fluffy. Add eggs, one at a time, mixing
well after each egg.
Slowly blend in flour mixture into the butter and
sugar. Mix well.
Stir in peanut butter chips.
Drop rounded teaspoonfuls of the cookie batter
onto an ungreased cookie sheet.
Place in warmed oven and bake for 8 to 9 minutes.
These cookies can over-bake very easy. Remove them from the
oven while they are still puffy. They will flatten as they
cool.
Cook's Note: If you like a more chocolatey
cookie, you can substitute 1 cup of chocolate chips for 1 cup of the
peanut butter chips. Sometimes I use only chocolate chips to
have a chocolatey chocolate cookie. Experiment and have fun!
