Another cookie celebration day! June 23rd is National Pecan
Sandy Day.
Popular Cookie Recipes has come up with a few ideas to help you
celebrate this wonderful day. You can start out baking a batch
of homemade pecan sandies with our easy pecan sandy recipe. Pecan Sandies Recipe
• 1/4 cup powdered sugar plus extra for coating
• 2 cups all purpose flour, sifted
• 1 cup finely chopped pecans
• 1 cup butter, softened
• 1/2 teaspoon baking soda
• 2 teaspoons vanilla
• 1 tablespoon water
Pecan Sandies Recipe Directions
Set oven temperature to 300 degrees.
In a large mixing bowl, cream together butter and powdered sugar.
Add vanilla and water. Mix well.
Combine flour with butter mixture. Stirin chopped pecans.
Using clean hands, roll the pecan sandy dough into 1 inch balls.
Place on ungreased cookie sheet and flatten slightly with hand.
Bake at 300 degrees for approximately 20 minutes. Cool on
cookie sheet until you are able to handle the pecan sandies
comfortably with your hands.
Place 3-4 pecan sandy cookies in a ziploc bag containing powdered
sugar and shake gently to coat the cookies. Remove from bag
and cool completely on wax paper before storing in an airtight
container.
After your pecan sandies have cooled, you can enjoy them with a
large glass of milk or make a few of these cool treats.
You will need:
24 pecan sandy cookies and 1 pint of vanilla ice cream, softened
Place 12 cookies on a cookie tray. Spoon a small scoop of
vanilla ice cream on each cookie. Top with remaining pecan
sandies.
Freeze at least 2 hours or until ice cream has stiffened. Its
best to put the entire cookie sheet in the freezer and remove the
pecan sandy ice cream cookies from the tray after they have
hardened. Once frozen, you can enjoy the pecan sandy
sandwiches immediately or you can place the in freezer bags to enjoy
in the future.
