Tropical Frozen Mousse
Place mango chunks in food processor and blend until smooth. Transfer to bowl. Blend in sugar, lime peel, kirsch, and juice. Fold whipped cream into mixture and pour into sherbet glasses. Cover and freeze for four hours; let sit at room temperature for 30 minutes before serving.
In medium saucepan, combine the milk and salt. Heat the milk until bubbles form around the edges of the pan, set aside, and cover to keep hot. In a food processor, blend the sugar and egg yolks and then gradually add the hot milk. Return the mixture to the saucepan, cover it and place over medium heat, stirring for 6 to 8 minutes. Then, set into a bowl of ice water. Stir for 2 minutes, cover and refrigerate for 2 hours. Next, beat the cream until soft peaks form and fold it into the custard mix. Transfer to an ice cream maker and freeze according to instructions.
In medium pan, combine the sugar and water and bring to boil. Stir until sugar dissolves and let cool. Stir in fruit and lemon juice and pour into chilled 13-by-9-inch metal baking dish. Place in freezer, stirring every 30 minutes, until mixture is firm.
Combine all ingredients and stir until sugar melts. Pour into a pan and place in freezer for half an hour. Remove and use a dinner fork to scrap off ice crystals; repeat this every half hour for 4-3 hours. Once frozen, fluff with a fork and allow flakes to ‚€œdry‚€Ě for half an hour before serving.
Blueberry Ice Cream
In 3-quart saucepan combine blueberries, sugar, and orange juice. Mash berries and cook over medium heat until it comes to a boil. Simmer 5 minutes, remove from heat and puree. Push mixture through a strainer and cool it. In an ice cream maker combine the blueberry mixture, cream, and vanilla and freeze according to directions.
Coconut Ice Cream
Whisk the coconut milk, half and half and sugar into medium bowl until the sugar dissolves. Transfer the mix to an ice cream maker and process according to instructions.
Puree the cubed mangoes. Pour in simple syrup and lime juice and puree it all. Place the entire mixture into an ice cream maker and freeze thoroughly.
Peach Frozen Yogurt
Combine the sugar, gelatin and nutmeg in a saucepan. Stir in the milk and let stand for a minute. Place over low heat for 5 minutes, stirring. Remove from heat and stir in the corn syrup. Let the mixture cool completely and in a food processor puree the peaches. Combine the puree with the gelatin mixture, vanilla, and yogurt in a bowl. Cover and chill for 8 hours then pour into an ice cream machine and process.
Combine sugar, syrup, and butter in a saucepan. Next, cook over medium heat until sugar dissolves and the mixture is at a boil. Allow it to boil for a minute. Remove and let stand for about five minutes. In another bowl, combine the evaporated milk, vanilla, and baking soda. Stir into the sauce. Pour into a jar and refrigerate.
Almond Fried Ice Cream Recipe
Scoop the ice cream out and freeze separately until it‚€™s extremely hard. Then heat the cooking oil in a deep-fryer. Roll each ice cream ball into the tangerine sauce and then into the sliced almonds. Make sure to coat thoroughly. Deep fry for a few seconds and it‚€™s ready to serve.
