How to Substitute Ingredients in Baking

It has happened to everyone. You get in the middle of a huge baking spree, and you realize you have run out of something, and must substitute. Or, you are aiming to make a recipe healthier by substituting a better ingredient. Whatever the reason, there are many ways to substitute ingredients in recipes.

Healthier Foods

With today’s’ processed foods and high fat content, many people are looking to substitute healthier choices in their recipes. Many recipes allow the use of applesauce instead of oil in their recipes, an extremely healthy choice. Canadian and turkey bacon can be a substitute for pork bacon, as can trans-fat free butter spreads in the place of margarine. Helpful hints from the Mayo Clinic shows readers how to make substitutions for many different recipes. Light cream can also be substituted for heavy cream, which is a much used item in baking. Skim milk can almost always be used instead of whole milk, and is a much healthier alternative. Another interesting substitute is the use of baby prunes instead of butter.

When You Run Out

Probably one of the most common uses for substitutions is when a person runs out of an ingredient in the middle of a recipe, and can’t go to the store right away. At times like these, substituting an ingredient may be the best idea. Lemons are a good substitute for vinegar if you are making a vinaigrette salad dressing. Running out of sugar happens many times, but simply substitute 1 cup of molasses or honey with a half teaspoon of baking soda for each cup of sugar. For a recipe that calls for semisweet chocolate squares, 3 tablespoons of cocoa, 2 tablespoons of sugar with 1 tablespoon of butter can be substituted. This can be an excellent substitute when making a chocolate chip cookie recipe or various other cookie recipes. One tablespoon of vinegar can be used for one egg in a recipe, and using one tablespoon of golden syrup to replace an egg can also be done.
