Peppermint Meltaway Cookies – A Very Welcome Addition to Holiday Cookie Platters

CHRISTMAS COOKIESIt’s still summer and fall is yet to come, but we’re featuring a popular Christmas treat, called Peppermint Meltaway, a cheery addition to festive cookie platters. They’re also a hit as Christmas gifts!

The reason why these festive cookies are quite a hit is because they are like soft fluffy shortbreads that literally melt in the mouth. The fluffiness and cookie taste is the result of butter, flour, cornstarch and powdered sugar combined, to make the cookie dough.

Yet it’s the little peppermint cream cheese topping that brings out the fun Christmasey taste once you start popping them in your mouth. Don’t be surprised if they’re the first to disappear from the cookie platters.

Peppermint Meltaway Cookie Recipe

Peppermint MeltawaysTo make the Peppermint Meltaway cookie dough, you will need the following ingredients:

Softened salted butter – 1 cup
Powdered or Confectioners’ sugar – ½ cup
All purpose flour – 1 and ¼ cup
Cornstarch – ½ cup
Peppermint Extract – ½ teaspoon

In a separate mixing bowl, combine the all-purpose flour and cornstarch, and set aside after mixing them well. Using another bowl, mix and cream together the powdered sugar and the softened salted butter. Mix in the peppermint extract to the butter-sugar mixture. Slowly add the flour and cornstarch mixture to the peppermint flavoured creamed ingredients and mix them well to make the cookie dough.

Cover the cookie dough in the mixing bowl and chill it for about an hour. Thereafter, cut and roll the dough into one and a half inch-sized dough balls that you will line up about two inches apart on baking sheets lined with parchment paper.

Preheat the oven at 350 °F then bake for about 10 to 12 minutes or once the edges become brown. Set aside to cool the cookies in preparation for the peppermint cream cheese frosting

Recipe for the Peppermint Cream Cheese Frosting

Ingredients:
Cream Cheese – 1 block
Salted Butter – Two tablespoons salted butter
Powdered Sugar – 1 and ½ cups
Milk – 2 tablespoons
Peppermint Extract – ¼ teaspoon
Crushed peppermint candies – ½ cup

Except for the crushed peppermint candies, combine all ingredients and mix them well until a smooth consistency is achieved. Top each peppermint cookie with the cream cheese frosting whilst adding a dash of the crushed peppermint candies in the middle.
